TARTE TATIN REFINED WITH CINNAMON ICE CREAM

Roughly chop the walnuts in the bamix® Processor then roast in a frying pan at medium heat for approx. 5 minutes without oil. Sprinkle the sugar over the walnuts, continue roasting briefly until the sugar caramelises, spread the nuts on baking paper and allow to cool. Preheat oven to 220 °C. Roll out the puff pastry, cut out 4 circles of about 12 cm in diameter each, prick the dough all over with a fork and put in a cool place. Halve the apples, remove the core and cut the apples into slices in the bamix® SliceSy® with the grater no. 4. Cut the butter into cubes and place each cube together with 1 teaspoon of sugar on the bottom of each prepared baking tin. Place the apples on top and lay the puff pastry loosely over the apples. Bake in the middle of the oven for about 15 minutes. Remove, leave to rest for about 2 minutes, carefully slide the tartes onto plates and remove baking paper. Mix the vanilla ice cream with the cinnamon using the bamix® multi-purpose blade until the ice cream is soft and creamy. Scoop the ice cream onto the tartes and sprinkle with the nuts.
