Chickpeas – the star ingredient in houmous – are high in protein and fibre, making this a great, nutritious snack or party dip that can be rustled up in minutes. Delicious!

  • 400 gchickpeas
  • 1 xlemon
  • 1 xgarlic clove
  • 1 xbell pepper
  • 1 tbsptahin
  • 1 tbspolive oil
  • 1 tspcumin

Drain and tip the chickpeas into a jug. Peel and add the garlic, then add the tahini, a good squeeze of lemon juice and 1 tablespoon of oil. Season with a pinch of sea salt, then blitz using the multi-purpose blade.
Use a spatula to scrape the mixture down the sides of the bowl, then blitz again until smooth, adding a little more oil if needed. Have a taste and tweak with a little more lemon juice, then transfer to a serving bowl.
Finish with a sprinkling of paprika, some cumin seeds (toast them first, if using) and an extra drizzle of oil. Delicious served with crunchy veg, such as carrots, radishes and sliced peppers, and warm flatbreads.
