Preheat the oven to 220 °C. Generously grease a muffin tray. Warm up the milk. Stir in eggs, 2 tbsp of melted butter, flour and salt with the bamix® multi-purpose blade until everything is smooth. Place the muffin tray in the oven for 2 to 3 minutes to preheat. Take the muffin tray out of the oven and quickly put about 50 g of batter into each cup. Bake for 20 to 25 minutes, until the popovers have risen and are golden brown. During the last minute of baking, put the Brie in a pot and melt for about 30 seconds. Remove the popovers from the oven, prick the tops immediately and put some melted Brie in each hole. Garnish with a dollop of blackberry jam.
Mix blackberries, sugar and 2 tbsp lemon juice in a pot. Bring to the boil at medium heat, reduce the heat and simmer for about 20 minutes, stirring constantly, until the mixture thickens and becomes glossy. Purée the berries with the bamix® multi-purpose blade. Remove from the heat and stir in the remaining lemon juice and zest.
