Preheat the oven to 200 °C. For the batter, mix the eggs, flour, milk, sugar, salt and cinnamon in the bamix® jug with the bamix® multi-purpose blade until smooth. Then, leave the batter to rest for about 10 minutes. Put the butter in an ovenproof pan with a high rim. Melt the butter in the oven on the middle rack. Then, carefully pour in the batter. Return the pan to the oven. Bake for about 15 minutes until the pancake is golden brown and has risen up on the sides. Dust the pancake with icing sugar and serve immediately. If desired, top each pancake with a dollop of currant jam or a little maple syrup.
