Prepare the SliceSy® with the chopping blade. Put the flour, 75 g sugar and 1 pinch of salt into the SliceSy®. Add softened butter in flakes and the egg. Knead with the bamix® on speed 2 until smooth. Wrap the dough in cling film and refrigerate for 1 hour.
For the marzipan filling, finely grind the pistachios in the Processor. Set aside 1 tbsp pistachios for the lime sugar. Knead the remaining pistachios with the marzipan and icing sugar using the bamix® and the multi-purpose blade. Preheat the oven to 180 °C. Line two baking trays with baking paper.
Briefly knead the dough on the worktop, sprinkle a little flour on the worktop and roll out the dough to a thickness of approx. 3 mm. Cut out circles with a biscuit cutter or a glass (approx. 7 cm ø). Place max. 1 tsp of marzipan filling in the centre of each circle, fold the circles in half and press the edges down. Place on the baking trays. Bake one after the other on the middle rack for 13 to 14 minutes, until golden.
For the pistachio-lime sugar, finely grate the zest of the lime. Mix the lime zest with the pistachios and 50 g sugar using the bamix® and the multi-purpose blade, then place on a plate. Melt 1 tbsp butter. Brush the top of the biscuits with the melted butter, press gently into the sugar mixture and leave to cool.
