Preheat the oven to 200 °C. Put 55 g sugar, flour and oat flakes in a bowl and mix with the bamix® multi-purpose blade. Add 55 g cold butter and knead with your hands until a crumble forms. Spread the crumble on a baking tray lined with baking paper. Bake in the oven for about 15 to 20 minutes or until the crumble is golden brown. Peel the apples, remove the core and cut into cubes. Melt 30 g butter in a pan over medium heat and roast the apple pieces for about 5 to 7 minutes. Add 85 g sugar, cinnamon and apple balsamic vinegar and mix. Reduce heat and simmer for about 10 to 15 minutes until apples are caramelised and golden brown. Using the bamix® beater, whip the cream until stiff, then carefully add the vanilla sugar. After that, carefully fold in the plain yoghurt. Layer the dessert in glasses. Start with a layer of caramelised apple pieces, spread the crumble on top and then pour the yoghurt crème on top. Repeat with all three layers. Finally, sprinkle some more crumble and apple pieces on top of the yoghurt crème. Place in the fridge until you are ready to serve.
