Preheat the oven to 175 °C upper and lower heat. Lightly butter a springform cake tin (20–24 cm) or ovenproof pan. Melt the butter over medium heat and set aside.
Put the sugar and lemon zest into the bowl and mix well using the bamix® with the mincer attachment. What a scent! A dream. Add the eggs one after the other and beat well using the bamix® whisk attachment. Add the salt and vanilla. Then stir in the flour. Add the liquid butter, stir everything into a nice, smooth dough using the bamix® mincer attachment and pour into the prepared cake tin.
Chop the almonds using the bamix® with the Processor attachment and spread them over the dough. Sprinkle everything with 2 tablespoons of sugar. Bake for approximately 25–30 minutes, depending on the size of the cake tin and the oven features. Sometimes these built-in appliances have their own personality.
