For the fruity filling
- 400 gapricots
- 1 tbsplemon juice
- 1 pcvanilla pod
- 1 tbspsugar
- 100 gAmarettini biscuits
For the crème
- 500 glow fat curd cheese
- 2 tbspsugar
- 200 mlcream

For the fruity filling
Wash and clean the apricots and cut them into fine slices. Put 6 apricot slices aside for garnishing. Cut the vanilla pod open lengthwise, scrape out the pulp and put aside. Put the scraped out vanilla pod together with 2 tbsp water, fruit, lemon juice and sugar in a pot and simmer for 3 minutes at low heat. Remove the vanilla pod. After cooking, finely purée the apricots with the bamix® multi-purpose blade. Coarsely chop the Amarettini biscuits with the bamix® processor and set aside 1 to 2 tbsp for garnishing.
For the crème
Scrape out the pulp from the vanilla pod and mix it with the curd cheese and sugar using the bamix® whisk. Beat the cream with the bamix® beater until stiff and fold it in. Spread half of the crème on the bottom of the 6 dessert glasses. Put the Amaretti crumbs on top and cover with apricot purée. Spread the rest of the crème on top and garnish with the apricot slices and biscuit crumbs.
