For the berries
- 500 gmixed berries
- 100 gsugar
- 3 tbsplemon juice
- 3 tspcorn starch
- 8 sheetsmint
For the crème
- 500 gcurd cheese
- 5 glemon zest
- 16 gvanilla sugar
- 200 mlcream
- 100 gcantuccini

Directions




For the berries
Carefully wash and sort the berries; clean the strawberries and cut into quarters. Defrost the frozen berries. Finely purée half of the berries with 75 g sugar and lemon juice using the bamix® multi-purpose blade. Stir in the corn starch with the bamix® multi-purpose blade and continue to stir for 1 minute. Roughly chop the mint leaves with the bamix® processor. Set aside 2 tbsp of the chopped mint leaves. Fold the rest with the remaining berries into the purée.
For the crème
Mix the curd cheese with lemon zest, vanilla sugar and the remaining sugar using the bamix® whisk. Whip the cream with the bamix® beater until stiff and fold in.
The finish
Coarsely chop the cantuccini in the bamix® processor. Layer the curd cheese cream, biscuits and berries in the glasses. Finish with the curd cheese and sprinkle with the remaining berries and chopped mint leaves. Refrigerate the layered dessert for 1 hour.
