Finely chop the shortbread biscuits with the bamix® SliceSy and the chopping blade, then mix with the cocoa powder, sugar and melted butter. Add the milk, stirring constantly. Line a springform pan with baking paper and spread the biscuit crumb mixture evenly.
Grate the lemon zest and then squeeze the juice from the lemons. Mix the curd cheese with the grated lemon zest and lemon juice; add the icing sugar. In another bowl, use the bamix® beater to whip the cream until stiff, then mix everything together with the bamix® whisk. Spread the crème on top of the shortbread biscuit base. Next, spread the previously prepared vanilla crème on top. For the final layer,use the bamix® beater to whip the cream and vanilla sugar until stiff, then spread it over the curd cheese crème. Once all the layers are neatly spread on the biscuit base, dust the cake with cocoa powder or sprinkle with chocolate shavings. Chill for at least 3 to 4 hours, preferably overnight.
Dissolve the sugar in 600 ml milk and prepare the pudding, then leave to cool. In another bowl, use the bamix® beater to whip the cream until stiff and add to the pudding. Mix everything with the bamix® whisk.
