Preheat the oven to 200 °C upper and lower heat. Cover the baking tray with baking paper and keep it ready. Mix the flour, cornstarch and baking powder using the bamix® with the mincer attachment. Beat the egg whites on speed 1 until stiff, using the bamix® and the whisk attachment. In the process, let the sugar slowly trickle in and mix using the bamix® with the beater attachment until the egg white is nice and stiff.
Put the egg yolks on top and mix them in briefly, using the bamix® and the whisk attachment on speed 1. Then sift the flour mixture over and fold in with a wooden spoon until no more flour pockets are visible.
Bake the sponge cake for 10 minutes. Meanwhile, spread a tea towel over the worktop and sprinkle it with sugar. After the baking time, immediately turn the sponge cake with the baking paper onto the tea towel so that the baking paper is on top. Using a pastry brush, apply a little water to the baking paper and gently peel it off. Then immediately roll it up tightly with the tea towel and let it cool for about 20–30 minutes.
For the filling, first whip the cream until stiff, using the bamix® with the beater on speed 1, adding a pack of whipping cream stiffener and a sachet of gelling powder. Now in another bowl, mix the cream cheese and the lemon zest, using the bamix® with the mincer attachment. Add one sachet of gelling powder and stir for one more minute using the bamix® with the mincer attachment. Then mix in the sugar. Fold the whipped cream into the cream cheese mixture.
Carefully roll up the slightly cooled sponge cake roll and spread the filling over it. Then roll it up again, this time, of course, without the tea towel. Put the roll with the seam down in the refrigerator. Sprinkle with icing sugar before serving.
