To make the dough, use the bamix® SliceSy® and the chopping blade. Add the flour first, then the sugar, egg, salt and butter. Make sure the butter is really soft. It is best to take it out of the fridge 1 to 2 hours beforehand. Add the butter pieces in flakes. Finally, add the lemon zest and lemon flavouring. Keeping the lid closed, knead with the bamix® on speed 2 for about 1 minute.
Wrap the dough in cling film and refrigerate for about 1 hour. Only chilled dough can be processed optimally. If it is too warm, the dough will stick to the rolling pin.
Roll out the chilled dough thinly with a rolling pin and cut out any desired shapes with biscuit cutters.
Place the Christmas biscuits on a baking tray lined with baking paper. Brush with milk and sprinkle with sugar, flaked almonds or coloured sugar sprinkles.
Bake the Christmas biscuits in the middle of a preheated oven at 200 °C, for about 10 to 12 minutes. In the last few minutes, make sure that the cookies do not get too dark.
