Mix the two flours with the sugar in a large bowl. With 4 tbsp water, use the bamix® multi-purpose blade to form a liquid batter and place in a deep dish. Put the coconut flakes in a separate deep bowl. Peel the sweet bananas and cut them into 8 equal pieces. First, dip the banana pieces in the thick batter, let the batter drip off a little and then coat the bananas thoroughly with the coconut flakes. Put some oil in a pan and fry the banana pieces in hot oil until golden brown. Then, carefully lift out of the pan and drain on kitchen paper.
Bring the coconut milk and a pinch of salt to the boil in a small pot. Use the bamix® whisk to stir 1 tsp rice flour with 1 tbsp water into the coconut milk and let the sauce simmer for about 3 minutes, stirring constantly. Arrange the fried banana pieces in their coconut coating on plates and serve with a dollop of coconut dip.
